5 hotel breakfasts you must try at Thon Hotels

At Thon Hotels, a great start to the day is high on our list of priorities. Here are five of our hotels worth visiting for the breakfast alone.

They say that breakfast is the most important meal of the day and at Thon Hotels, we take this seriously. That’s why you always get a generous breakfast buffet included in your room rate when staying with us, so you can start your day in the best possible way. 

But you don't need to be an overnight guest to enjoy our breakfast - you’re also very welcome to enjoy breakfast as a walk-in guest.

1. Thon Hotel Nordlys in Bodø

Thon Hotel Nordlys is centrally located in the 'capital of Nordland', with views of the Lofoten Wall and Hurtigruta sailing past.  Guests come here to explore the beautiful coast, go on a sea eagle tour, kayak or experience Saltstraumen, but also to eat a delicious and flavourful breakfast. 

"Our focus is on quality ingredients and creating a warm and pleasant ambiance. You should not feel like you're sitting in a cafeteria," says the hotel director. 

An open kitchen where the chefs prepare the breakfast foods creates unique interaction between the kitchen staff and guests.

"You can expect to be greeted by pleasant and friendly staff members and that we will go the extra mile for every guest." The kitchen staff makes sure to create an inviting buffet at all times and are happy to answer any questions you may have about the food. 

As with all our hotels, Thon Hotel Nordlys also has a preference for local products. The breakfast buffet includes several local cheeses from the Kjerringøy farmhouse cheesemakers and smoked salmon from Lofoten. 

"The smoked salmon is superb and the cheeses are fantastic. They’re also clearly a guest favourite because they're the most popular dish," says the director.

The hotel director mentions the buffet’s overnight oats as his favourite. It's made with apples, oats and grapes and topped with fresh fruit and coconut. 

"The overnight oats are excellent. We get lots of good feedback on the dish and it's hugely popular. But the secret behind the great taste will remain a secret," says the hotel director with a smile.

You can also enjoy great views from the attractive breakfast room. From here you have unobstructed views of the marina and harbour promenade. 

"The harbour area in Bodø is wonderful and an experience in itself."

2. Thon Hotel Ålesund

Thon Hotel Ålesund is beautifully located at the entrance to the Port of Ålesund, with views of the harbour basin, pier, Molja lighthouse and sea. From here, it is a short walk to various exciting activities in this Art Nouveau city. But it's a good idea to have some breakfast before exploring. 

From the breakfast room at Thon Hotel Ålesund, you can watch the fishing boats sailing in and out, cormorants hunting for fish and people jumping into the water from Svai, the floating sauna. 

“It’s buzzing with life outside, yet quite peaceful, close to the sea, waves and nature,” says the hotel director, and adds,

"The view itself is worth the visit and it’s just as beautiful in bright sunshine as when a storm is raging and the waves are beating against the walls." 

And with a newly renovated hotel, the hotel director believes it is just as fantastic inside as outside. 

The breakfast buffet is no exception and includes such local specialities as smoked salmon from Norsk Sjømat Stranda, as well as both Stranda cured hame and Strandamør sausage. Every day, the kitchen staff also bake homemade brownies and various other sweets. 

"It’s clear that the employees are proud of the food they serve and put their heart into their creations. This results in a lot of fantastic buffet dishes."

3. Thon Hotel Lofoten and Thon Hotel Svolvær

Thon Hotel Lofoten and Thon Hotel Svolvær are located in the heart of Svolvær, the capital of Lofoten. Both are an excellent starting point for memorable experiences in one of Northern Norway’s most beautiful destinations, whether you want to hike, try traditional Lofoten fishing, go on a RIB boat tour or explore the city. But it’s also worth the trip here for the food alone: 

"You can enjoy freshly smoked, whole cod roe, a far cry from the caviar cream you get in a tube. That’s a reason in itself," says hotel director Erik Taraldsen. 

The well-known delicacy is made from Lofoten skrei, smoked locally and packed in barrels before being delivered to the entire world - and to Thon’s breakfast buffet. 

This breakfast buffet has also been named the best in the county several times in the Twinings Best Breakfast competition. During the last competition, Thon Hotel Lofoten won the finals and now boasts Norway’s Best Breakfast 2024. 

The breakfast buffet also boasts several other local favourites: Cheese and dairy products from Lofoten farmhouse cheesemakers, Aalan Gård and Den sorte gryte, smoked salmon from Anitas Sjømat on Sakrisøy and cured lamb from Lofotlam - and more. 

“We also have herbs, microgreens and lettuce from our own greenhouse on the roof of Thon Hotel Svolvær,” says the hotel director.

"It doesn't get any more local than that." 

The breakfast selection is almost the same at Thon’s two hotels in Svolvær and both also boast a breakfast room with views of both the sea and mountains. 

"Both restaurants have large glass windows overlooking the sea. Most guests come here for everything happening outside the windows, so we wanted to bring a bit of nature inside as well," says Taraldsen, and adds, 

"After all, Lofoten has been nominated the world’s best archipelago in several major tourism awards, including National Geographic and Condé Nast. And if you ask me, it’s the nature, ambiance, food and people that make Lofoten so unique." 

"And with the views from the breakfast room and local specialities in the buffet, you really get to experience Lofoten at its best."

4. Thon Hotel Kirkenes

“We often get feedback from guests on our breakfast and they particularly appreciate the wide selection, friendly and helpful staff and beautiful views of Bøkfjorden,” says the hotel director at Thon Hotel Kirkenes. 

Thon Hotel Kirkenes is the city’s largest course and conference hotel, located by the quay in the centre of Kirkenes, at the very tip of northern Norway. 

The generous breakfast buffet includes several homemade goodies, such as roast beef with venison, moose meatballs, dried moose sausage, smoothies and energy shots. The hotel also offers a wide range of organic breakfast foods, muesli and fruit, as well as allergen-free products. 

"Both the pecan pie and sticky chocolate cake are very popular with our guests who want an allergy-friendly treat. The chia porridge is also a favourite," says the hotel director. 

The hotel also has several local products in the buffet, such as pike fish cakes from Pasvik, strawberries from Neiden and pickled Arctic charr rom Jakobsnes. 

"And my favourites: Smoked salmon from Betula Røykeri in Vestre Jakobselv and cheese from Øverli Gård in Pasvik. The taste is incredible," says the director, and adds, 

"It’s important for us to showcase all that our region has to offer - and in doing so, give our guests an excellent culinary experience." You get to experience a taste of Finnmark in several ways.

5. Thon Hotel Rosenkrantz Bergen

Thon Hotel Rosenkrantz Bergenis located near historic Bryggen in the heart of the Bergen city centre. From here you can easily explore the capital of Western Norway – after energising with a delicious breakfast. 

“We want to offer that little something extra and fine-tune the details, selection and presentation daily to make breakfast the highlight of our guests' stay,” says the hotel director.

"It is important for us to offer our guests genuine food and service. We vary the ingredients according to the season and also prepare a lot here at the hotel, such as jam, smoked salmon and roast beef." 

In the hotel’s breakfast room, emphasis has been placed on creating an aesthetically pleasing and inviting, homey atmosphere, with everything from colourful walls to herbs as wall decorations. In the lounge, you can enjoy both a cup of coffee from the Nespresso machine and views of historic Bryggen. 

The breakfast buffet includes a number of local goodies: Fana cheese, camembert, Jørnsberg cheese with cumin and cloves and pears and chilli jelly from Ostegården. 

"Our chefs also prepare a 'daily treat', which is anything from flaxseed chips with blue cheese cream to hot chocolate with regular cream," says the hotel director.
